ORANGE GRANITA

                         With the summer in full swing, who wouldn't love some ice. When its been flavoured to our liking, then its the best thing to have. Who can forget the baraf ka golas, that we had when we were kids. Parents were less protective then. Our kids have literally been ignorant of the small pleasures we had. Thankfully, these things are getting back in vogue in weddings and birthdays. But I still prefer to make them at home for my kids. The kids too love making them, so rather than letting them sit in front of the TV the whole day long, get them to make this. They'll love it all the more because it'll be their effort, hence will taste sweeter.

Ingredients:
           1 cup castor sugar
           1 1/2 cups water
            2 cups orange juice
Method:
           Heat up the sugar and water in a pan. Stir to make sure the sugar doesn't stick to the bottom of the pan. Stop stirring once it comes up to a boil. Remove from heat and let it cool. Once cool add the orange juice. you can add more or less depending on the sweetness of the mixture, it depends on your taste. Pour in a flat metal container. the thinner the layer of the juice, the better and easier it sets. Keep in the refridgerator for 4-6 hours or until set. To serve, rip up the granita with a fork to small icy granules. Spoon into glasses. Decorate with mint and serve.
